Daniel Fast: Lentil Sweet Potato Soup

Let me just say that I love my crock pot!  There is nothing like coming home from working all day to the smell of dinner already cooked and ready to be dished out.  But last night I decided to utilize my crock pot in a different way by preparing the soup before bed and letting it cook all night while I slept.  So basically tonight’s dinner, plus plenty to freeze for the Daniel Fast, was completed by 7am this morning…nice!

Here is the recipe which I found on the web.  I made a few changes based on what I had in my kitchen.

Ingredient List:

2 cups green lentils

64 oz. vegetable broth

4 large carrots chopped

4 celery stalks chopped

1 onion diced

10 small fingerling sweet potatoes cubed (I left the skin on.  You could use 2 large sweet potatoes.)

4 medium tomatoes diced

1 bay leaf

1 tsp. dried oregano

4 garlic cloves minced

Salt and pepper to taste



It’s pretty simple.  Chop everything up and put in a crock pot.  Cook on low for 10 hours.  Here is what it looked like at the beginning…

This is a thick and hearty soup which I will pair with some sliced fruit or a green salad.
